About Levan: Structure
STRUCTURE: The following levan structure shows the fructan backbone and the method for attachment of occasional branches.
Our levan has a molecular weight greater than 10 million Daltons. The long chain polymer is wound into a densely packed sphere only 50-200 nm in diameter. Entanglement of branches radiating from the sphere surface contributes to cohesive strength. Free hydroxyl groups on branches offer locations for derivatization without steric hindrance. The hydroxyl number is 89 mg KOH/gm.
